No-Bake Chocolate Oat Bars
Ingredients:

1 cup butter (or coconut oil for dairy-free)

1/2 cup brown sugar or honey

1 tsp vanilla extract

3 cups rolled oats

1 cup semi-sweet chocolate chips

1/2 cup peanut butter (or almond/sunflower butter)
Instructions:

Melt & mix base:
In a saucepan over medium heat, melt butter and stir in brown sugar and vanilla. Mix until smooth. -
Add oats:
Stir in the oats and cook for 2–3 minutes, just to coat and slightly toast. Remove from heat. -
Press the base:
Press half the oat mixture into a lined 8×8 or 9×9 pan. Press it down firmly to form a solid base. -
Melt chocolate layer:
In a microwave-safe bowl, melt chocolate chips and peanut butter together in 20–30 second bursts, stirring until smooth. -
Assemble:
Pour the chocolate mixture over the oat base and spread evenly. Top with the remaining oat mixture—press gently. -
Chill:
Refrigerate for at least 2 hours (or freeze for 30–45 mins) until firm. Cut into bars and enjoy!
