Southwestern Coleslaw

Yes! Southwestern coleslaw is the zesty, colorful side dish your tacos and grilled meats have been dreaming of. It’s got crunch, tang, and just the right kick of flavor.


Easy Southwestern Coleslaw

Ingredients:

  • 1 bag (14 oz) coleslaw mix (or 6 cups shredded cabbage + carrots)

  • 1/2 cup corn (fresh, frozen, or canned & drained)

  • 1/2 cup black beans, rinsed and drained

  • 1/4 cup red onion, finely diced

  • 1/2 red bell pepper, diced

  • 1/4 cup chopped fresh cilantro

  • 1 jalapeño, seeded and minced (optional, for heat)

For the Dressing:

  • 1/2 cup mayo (or half mayo, half sour cream/Greek yogurt)

  • 1 tbsp lime juice

  • 1 tsp honey or maple syrup

  • 1/2 tsp ground cumin

  • 1/2 tsp chili powder

  • Salt & pepper to taste


Instructions:

  1. Mix the veggies:
    In a large bowl, toss together coleslaw mix, corn, black beans, red onion, bell pepper, cilantro, and jalapeño.

  2. Make the dressing:
    In a small bowl, whisk together all dressing ingredients until smooth.

  3. Combine:
    Pour dressing over the slaw and toss until everything’s evenly coated.

  4. Chill & serve:
    Refrigerate for at least 30 minutes to let the flavors mingle. Stir before serving.
