Ingredients:

1 can (14.5 oz) diced tomatoes (drained)

1 tsp Italian seasoning

Salt & pepper to taste

1/2 cup shredded cheese (mozzarella, cheddar, or a blend – optional)

Instructions:

Cook the beef:
In a large skillet over medium heat, brown the ground beef with onion and garlic until no longer pink. Drain excess grease. -
Add zucchini & seasoning:
Stir in zucchini, Italian seasoning, salt, and pepper. Cook for 5–7 minutes, until zucchini is tender but not mushy. -
