Easy Zucchini Beef Skillet

Absolutely! This easy zucchini beef skillet is a one-pan, low-carb meal that comes together fast and is full of flavor.


 Easy Zucchini Beef Skillet

Ingredients:

  • 1 lb ground beef

  • 1/2 onion, diced

  • 2–3 cloves garlic, minced

  • 2 medium zucchinis, sliced into half-moons

  • 1 can (14.5 oz) diced tomatoes (drained)

  • 1 tsp Italian seasoning

  • Salt & pepper to taste

  • 1/2 cup shredded cheese (mozzarella, cheddar, or a blend – optional)

  • Fresh parsley or basil for garnish (optional)


Instructions:

  1. Cook the beef:
    In a large skillet over medium heat, brown the ground beef with onion and garlic until no longer pink. Drain excess grease.

  2. Add zucchini & seasoning:
    Stir in zucchini, Italian seasoning, salt, and pepper. Cook for 5–7 minutes, until zucchini is tender but not mushy.

  3. Add tomatoes:
    Stir in the drained diced tomatoes and cook another 2–3 minutes until everything is heated through.

  4. Cheesy finish (optional):
    Sprinkle cheese over the top, cover for a minute or two to let it melt.

  5. Serve:
    Garnish with fresh herbs if you’d like, and serve hot!
