Ooh, savory veggie & ham loaf? That’s hearty, homey, and packed with comfort. Think of it like a cross between meatloaf and a casserole—perfect for brunch, lunch, or dinner leftovers. Here’s a solid recipe:


 Savory Veggie & Ham Loaf

Ingredients:

  • 1½ cups cooked ham, finely chopped

  • 1 cup shredded cheddar (or Swiss, for extra flavor)

  • 1 cup grated carrots

  • ½ cup finely chopped onion

  • ½ cup finely chopped bell pepper (any color)

  • 2 cloves garlic, minced

  • ¾ cup breadcrumbs

  • 2 eggs

  • ½ cup milk

  • 1 tbsp Dijon mustard

  • 1 tsp dried thyme (or parsley)

  • Salt & black pepper, to taste

  • Optional topping: extra cheese or a brush of honey mustard


Instructions:

  1. Preheat oven to 350°F (175°C). Grease a standard loaf pan.

  2. Sauté veggies (optional but tasty):

    • In a pan, lightly sauté the onion, bell pepper, carrots, and garlic with a bit of oil until just tender (5–6 mins). Let cool slightly.

  3. Mix it up:

    • In a large bowl, combine ham, sautéed veggies, cheese, breadcrumbs, herbs, mustard, milk, eggs, salt & pepper.

    • Stir until evenly mixed.

  4. Shape and bake:

    • Spoon into your prepared loaf pan and press down gently to shape.

    • Top with cheese or a brush of honey mustard if using.

    • Bake for 45–55 minutes, until set and golden on top.

  5. Cool & slice:

    • Let it cool 10–15 minutes before slicing. It firms up as it cools.


Great with a side of mashed potatoes, mustardy green beans, or a salad.
