Here’s a delicious and savory Dijon Pork Tenderloin recipe that’s easy to make but packed with flavor. Perfect for a weeknight dinner or a special occasion!


Savory Dijon Pork Tenderloin

Ingredients:

  • 1.5 to 2 lbs pork tenderloin

  • 2 tbsp Dijon mustard

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tbsp fresh rosemary (or 1 tsp dried)

  • 1 tbsp fresh thyme (or 1 tsp dried)

  • 1 tbsp balsamic vinegar (optional, for extra depth)

  • Salt and black pepper to taste


Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Prepare the marinade:

    • In a small bowl, mix Dijon mustard, olive oil, garlic, rosemary, thyme, balsamic vinegar (if using), salt, and pepper.

  3. Marinate the pork:

    • Pat the pork tenderloin dry with paper towels.

    • Rub the marinade all over the pork. Let it sit for at least 15 minutes (or refrigerate up to 24 hours for deeper flavor).

  4. Sear the pork (optional but adds flavor and color):

    • Heat a skillet over medium-high heat. Add a bit of oil.

    • Sear the pork on all sides until browned (about 2–3 minutes per side).

  5. Roast:

    • Transfer the pork to a baking dish or oven-safe skillet.

    • Roast in the oven for 20–25 minutes, or until internal temperature reaches 145°F (63°C).

  6. Rest and serve:

    • Let the pork rest for 5–10 minutes before slicing.

    • Slice and serve with roasted veggies, mashed potatoes, or a light salad.


 Pro Tips:

  • Add a drizzle of honey or maple syrup to the marinade for a sweet-savory contrast.

  • For a sauce, deglaze the skillet with a splash of white wine or chicken broth after searing, then stir in a touch more Dijon and a dab of butter.
