Delicious Meatloaf Recipe with Mashed

Ohhh yes — a good meatloaf with mashed potatoes is peak comfort food. 🍽️ Whether it’s a weeknight dinner or a nostalgic weekend meal, this combo hits all the right notes: juicy, savory, creamy, cozy.

Here’s a classic meatloaf recipe with buttery mashed potatoes on the side:


Classic Delicious Meatloaf

 Ingredients:

  • 2 lbs ground beef (80/20 is ideal)

  • 1 small onion, finely chopped

  • 3 cloves garlic, minced

  • 2 eggs

  • ¾ cup breadcrumbs

  • ½ cup milk

  • 2 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp dried thyme (optional)

  • ¼ cup ketchup (mixed into the meat)

 For the glaze:

  • ½ cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp mustard or BBQ sauce (optional kick)


 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. In a bowl, mix beef, onion, garlic, eggs, breadcrumbs, milk, Worcestershire, seasonings, and ¼ cup ketchup.

  3. Transfer mixture to a baking dish or loaf pan, shape into a loaf.

  4. Mix glaze ingredients, spread over the top.

  5. Bake uncovered for 50–60 minutes, or until internal temp hits 160°F (71°C).

  6. Let rest 10 minutes before slicing.


Creamy Mashed Potatoes

Ingredients:

  • 2 lbs Yukon Gold or Russet potatoes, peeled & cubed

  • 4 tbsp butter

  • ½ to ¾ cup milk or cream (warm)

  • Salt & pepper to taste

  • Optional: sour cream, garlic, or cream cheese for richness

Instructions:

  1. Boil potatoes in salted water until fork-tender (15–20 min).

  2. Drain, mash with butter, then slowly add warm milk until creamy.

  3. Season to taste. Add a bit of sour cream or roasted garlic if you’re feeling fancy.


 Serve It All Up:

  • Slices of juicy meatloaf with a dollop of mashed potatoes on the side

  • Optional gravy or more ketchup glaze over both

  • Green beans, peas, or a salad for that classic diner plate vibe
