Potatoes & Green Beans with Sausage (One-Pan Style)
Ingredients:

1 lb smoked sausage or kielbasa, sliced into rounds

1½ lbs baby potatoes (halved or quartered)

½ lb fresh green beans (trimmed)

2–3 tbsp olive oil

1 tsp garlic powder
-
1 tsp paprika
-
½ tsp onion powder
-
Salt & pepper to taste

Optional: a squeeze of lemon or a sprinkle of parmesan at the end
Instructions:
Oven-Roasted Version:

Preheat oven to 400°F (200°C).

In a large bowl, toss potatoes with 2 tbsp olive oil, garlic powder, paprika, onion powder, salt, and pepper.

Spread on a baking sheet and roast for 20–25 minutes.

Meanwhile, toss sausage and green beans with 1 tbsp olive oil and a little extra seasoning.

After 25 minutes, add the sausage and green beans to the tray, toss everything, and roast for another 15–20 minutes, until the potatoes are golden and green beans are tender.

Finish with a squeeze of lemon or fresh herbs if you like!
Skillet Version:

Boil or microwave potatoes for 6–8 minutes to soften.

In a large skillet, cook sausage slices over medium heat until browned. Remove and set aside.

In the same skillet, add olive oil and potatoes, cook until golden and crispy.

Add green beans, cook until tender (5–7 minutes), then toss sausage back in. Season and serve.
