wings and poutine.

Ohhh now we’re talking comfort food royalty — crispy wings + poutine is the kind of combo that doesn’t mess around. One’s spicy, crispy, and finger-lickin’; the other’s gooey, gravy-loaded, cheesy indulgence. Here’s how to nail both in a home-cooked feast:


Crispy Chicken Wings (Oven or Air Fryer)

Ingredients:

  • 2–3 lbs chicken wings (drums & flats, separated)

  • 1 tbsp baking powder (NOT baking soda – this makes them crispy)

  • 1 tsp salt

  • 1 tsp garlic powder

  • 1/2 tsp black pepper

  • Optional: 1 tsp smoked paprika or chili powder

Instructions:

1. Dry & season:

  • Pat wings really dry with paper towels.

  • Toss with baking powder and seasonings until evenly coated.

2. Cook:

👉 Oven Method:

  • Preheat oven to 425°F (220°C).

  • Place wings on a rack over a foil-lined baking sheet.

  • Bake for 40–45 min, flipping halfway, until golden and crispy.

👉 Air Fryer Method:

  • Preheat to 390°F (200°C).

  • Cook wings in a single layer for 24–26 minutes, flipping at 12 minutes.

3. Sauce ’em up:

  • Toss in your favorite wing sauce (Buffalo, honey garlic, BBQ, Korean gochujang… whatever you’re feelin’).


Classic Poutine

Ingredients:

For the fries:

  • 4 large russet potatoes, cut into fries (or use frozen)

  • Oil (for frying or baking)

  • Salt

For the gravy:

  • 2 tbsp butter

  • 2 tbsp flour

  • 2 cups beef or chicken broth (or a mix)

  • 1 tbsp Worcestershire sauce

  • Salt & pepper to taste

For the toppings:

  • 1 to 1 1/2 cups fresh cheese curds (or torn mozzarella if curds are hard to find)


Instructions:

1. Fries:

  • Bake or fry the fries until crispy.

    • Oven: Toss in oil + salt, bake at 425°F for ~30–35 min

    • Air fryer: 400°F for ~20–25 min, shake halfway

    • Deep-fried: Fry twice for max crisp — once at 325°F, then again at 375°F

2. Gravy:

  • Melt butter in a saucepan, add flour and whisk to make a roux (2–3 min).

  • Slowly add broth while whisking. Add Worcestershire, salt, and pepper.

  • Simmer 5–10 min until thick and smooth.

3. Assemble:

  • Place hot fries on a plate.

  • Scatter cheese curds over top.

  • Pour hot gravy over everything so the curds get melty.


 Serve it up:

  • Plate wings beside a mountain of poutine.

  • Maybe a cold beer, or a crisp soda, and you’ve got a comfort food party.
