Garlic Butter Baked Scallops
Ingredients:
-
1 lb sea scallops (large, not the tiny bay ones), patted dry
-
3 tbsp unsalted butter, melted
-
3 cloves garlic, minced
-
1/4 cup grated parmesan cheese
-
1/4 cup panko breadcrumbs
-
1 tbsp lemon juice
-
Salt & pepper to taste
-
1 tbsp chopped parsley (for garnish)
-
Lemon wedges, for serving
Instructions:
-
Prep your scallops:
-
Preheat oven to 400°F (200°C).
-
Pat scallops dry with paper towels (super important for browning).
-
Remove the small side muscle if still attached (that little tough bit).
-
-
Make the garlic butter topping:
-
In a bowl, mix melted butter, garlic, lemon juice, salt, and pepper.
-
In another bowl, mix parmesan and panko together for the topping.
-
-
Assemble:
-
Place scallops in a lightly greased baking dish in a single layer.
-
Spoon garlic butter evenly over each scallop.
-
Sprinkle the parmesan-panko mix on top.
-
-
Bake:
-
Bake for 12–15 minutes until scallops are opaque and topping is golden.
-
If desired, broil for 1–2 minutes at the end to get that crispy top extra toasty.
-
-
Garnish & Serve:
-
Sprinkle with parsley, serve with lemon wedges, and bask in the compliments.
-
Serve With:
-
Crusty bread or over pasta/rice to soak up that garlic butter
-
A crisp white wine like Sauvignon Blanc or Pinot Grigio
-
A side of roasted asparagus, green beans, or a light salad
