Cheesy Garlic Bread Rolls

Posted on April 23, 2025

Ohhh yes — Cheesy Garlic Bread Rolls are pure carby, buttery, cheesy comfort.  Soft, pull-apart rolls loaded with garlic butter and melty cheese? Yeah, that’s the vibe. Whether you’re making them from scratch or shortcutting with dough, here’s a foolproof recipe that’ll have everyone reaching for seconds (or thirds ).

Cheesy Garlic Bread Rolls

Ingredients:

For the Dough (or use store-bought pizza dough for a shortcut):

  • 2 ¼ tsp active dry yeast (1 packet)

  • ¾ cup warm water

  • 1 tablespoon sugar

  • 2 cups all-purpose flour

  • 1 teaspoon salt

  • 1 tablespoon olive oil

For the Filling:

  • 1 ½ cups shredded mozzarella (or mix with cheddar/parmesan)

  • 2–3 tablespoons softened butter

  • 2–3 cloves garlic, minced

  • 1 teaspoon Italian seasoning or parsley

For Brushing:

  • 2 tablespoons melted butter

  • Extra garlic (optional), parsley, and a little parmesan

Instructions:

1. Make the Dough:

  • Mix warm water, sugar, and yeast. Let sit 5–10 mins until foamy.

  • Add flour, salt, and olive oil. Mix and knead for 5–7 mins until soft and smooth.

  • Cover and let rise 1 hour or until doubled.

(Or just grab a 1 lb ball of pizza dough and skip to the filling part.)

2. Prep the Garlic Butter Filling:

  • Mix softened butter, minced garlic, and herbs.

3. Assemble the Rolls:

  • Punch down dough and divide into 10–12 equal pieces.

  • Flatten each piece into a small circle.

  • Add about 1 tablespoon cheese in the center, plus a little garlic butter.

  • Fold dough around filling, pinch closed, and roll into a ball.

4. Second Rise:

  • Place rolls seam-side down in a greased baking dish or cast-iron pan.

  • Let rise again for 20–30 mins until puffy.

5. Bake:

  • Brush tops with melted butter + garlic + herbs.

  • Bake at 375°F (190°C) for 18–22 minutes, or until golden brown and puffed.

6. Final Touch:

  • Brush with more melted butter, sprinkle with parmesan or parsley.

  • Serve warm and gooey — pull-apart style.

 Optional Add-ins:

  • Stuff with pepperoni for a pizza roll twist

  • Use roasted garlic for extra depth

  • Add jalapeños or chili flakes for a spicy kick
