Ingredients:

For the Grilled Chicken Bites:

  • 1 lb (450g) chicken breast, cut into bite-sized cubes

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1/2 tsp smoked paprika (optional, for extra flavor)

  • Salt and pepper, to taste

  • 1 tbsp fresh parsley (optional, for garnish)

For the Creamy Garlic Sauce:

  • 1/2 cup mayonnaise (you can use Greek yogurt for a lighter version)

  • 1/4 cup sour cream (optional for extra creaminess)

  • 3 cloves garlic, minced (or more, depending on your garlic love!)

  • 1 tbsp lemon juice

  • 1 tsp Dijon mustard (optional, for a little tang)

  • 1 tbsp olive oil

  • Salt and pepper, to taste

  • 1 tbsp fresh parsley or chives, chopped (optional for garnish)

Instructions:

1. Prepare the Chicken:

  • In a bowl, toss the chicken cubes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Ensure that the chicken is evenly coated in the spices and oil.

  • Let the chicken marinate for at least 15 minutes (you can also marinate for a few hours if you have time).

2. Grill the Chicken:

  • Heat a grill or grill pan over medium-high heat. Once hot, add the chicken pieces and cook for 5-7 minutes on each side, or until fully cooked and slightly charred on the edges. Make sure to check that the internal temperature reaches 165°F (74°C).

  • If you don’t have a grill, you can also sauté the chicken in a skillet over medium-high heat until fully cooked.

3. Make the Creamy Garlic Sauce:

  • While the chicken is grilling, combine the mayonnaise, sour cream (if using), minced garlic, lemon juice, Dijon mustard (optional), olive oil, salt, and pepper in a bowl. Mix well until smooth.

  • Taste the sauce and adjust the seasoning, adding more garlic or lemon juice if desired.

4. Serve:

  • Once the chicken is done, remove it from the grill and transfer it to a serving platter.

  • Drizzle the creamy garlic sauce over the chicken or serve it on the side for dipping.

  • Garnish with fresh parsley or chives for a pop of color.

Tips:

  • Spicy Version: Add a pinch of cayenne pepper or red pepper flakes to the sauce for a spicy kick.

  • Add Vegetables: You can grill vegetables (like bell peppers, zucchini, or onions) alongside the chicken for a complete meal.

  • Healthy Option: If you want to make the sauce a bit healthier, substitute the mayo with Greek yogurt, or use a combination of both.
