Ingredients:

  • 1 lb (450g) sirloin steak or ribeye steak (cut into bite-sized cubes)

  • 2 tablespoons olive oil

  • Salt and pepper (to taste)

For the Garlic Butter:

  • 4 tablespoons unsalted butter (you can use more if you like it extra buttery)

  • 4 garlic cloves (minced)

  • 1 tablespoon fresh parsley (chopped)

  • 1 teaspoon fresh thyme (optional)

  • 1 tablespoon lemon juice (optional, for a little zing)

  • 1/2 teaspoon crushed red pepper flakes (optional, for a little heat)

Instructions:

  1. Prep the Steak:

    • Pat the steak dry with paper towels to remove excess moisture. This will help you get a nice sear.

    • Cut the steak into 1-inch cubes. Season generously with salt and pepper on all sides.

  2. Cook the Steak Bites:

    • Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the steak cubes in a single layer. Avoid overcrowding the pan — if needed, cook in batches.

    • Sear the steak bites for 2-3 minutes per side (or longer for more well-done steak) until they develop a nice brown crust. Be sure to cook the steak bites in batches if necessary to ensure they brown properly.

    • Once cooked to your desired level of doneness, transfer the steak bites to a plate and set them aside.

  3. Make the Garlic Butter:

    • In the same skillet, lower the heat to medium. Add the butter and let it melt in the skillet, scraping up any browned bits from the steak.

    • Once the butter is melted, add the minced garlic and sauté it for 30 seconds to 1 minute, until fragrant. Be careful not to burn the garlic.

    • Stir in the chopped parsley, thyme (if using), crushed red pepper flakes, and lemon juice (if using). Taste and adjust seasoning with salt and pepper if needed.

  4. Toss the Steak Bites in Garlic Butter:

    • Add the cooked steak bites back into the skillet and toss them in the garlic butter sauce, making sure they are evenly coated.

    • Let the steak bites cook in the butter sauce for another 1-2 minutes, just to allow the flavors to meld together.

  5. Serve:

    • Serve the steak bites immediately, garnished with more fresh parsley if desired.

    • These are great as an appetizer, or you can serve them alongside mashed potatoes, a salad, or roasted vegetables for a full meal.
