Keto chocolate peanut butter fudge is a rich and creamy treat that satisfies your sweet tooth while staying low in carbs! It’s super easy to make and perfect for a keto-friendly snack or dessert. Here’s a simple recipe:

Keto Chocolate Peanut Butter Fudge

Ingredients:

  • 1/2 cup peanut butter (natural, unsweetened, and creamy)

  • 1/4 cup unsweetened cocoa powder

  • 1/4 cup coconut oil (melted)

  • 1/4 cup powdered erythritol (or your preferred low-carb sweetener, adjust to taste)

  • 1/2 tsp vanilla extract

  • Pinch of salt

  • 1/4 cup heavy cream (optional, for a creamier texture)

  • Optional: chopped peanuts for garnish (or other nuts like almonds)

Instructions:

  1. Melt the Peanut Butter and Coconut Oil:

    • In a medium saucepan, melt the peanut butter and coconut oil over low heat until combined and smooth. Stir frequently to avoid burning.

  2. Add Cocoa Powder and Sweetener:

    • Once the peanut butter and coconut oil are melted and combined, add the unsweetened cocoa powder and powdered erythritol. Stir well until the mixture is smooth and the sweetener is fully dissolved.

  3. Add Heavy Cream (optional):

    • If you want a creamier fudge, add the heavy cream and mix it in. This step is optional but will give the fudge a more indulgent, melt-in-your-mouth texture.

  4. Add Vanilla and Salt:

    • Stir in the vanilla extract and a pinch of salt. This will enhance the flavor and balance the sweetness.

  5. Set the Fudge:

    • Pour the mixture into a lined or greased small baking dish or silicone mold. Smooth the top with a spatula to evenly distribute the fudge.

    • Optionally, you can sprinkle some chopped peanuts or other nuts on top for added crunch.

  6. Chill:

    • Place the dish in the refrigerator and let the fudge chill for at least 2-3 hours, or until it’s firm enough to cut into squares. If you’re in a hurry, you can place it in the freezer for 30-45 minutes.

  7. Slice and Serve:

    • Once the fudge has set, cut it into small squares or rectangles. Keep in mind, it’s rich, so small pieces are perfect for a satisfying treat.


Storage:

  • Store the fudge in an airtight container in the fridge for up to 2 weeks. You can also freeze it for longer storage. Just be sure to let it thaw a bit before eating.


Tips & Variations:

  • Sweeteners: Adjust the sweetness to your preference. If you’re using a different sweetener like monk fruit or stevia, follow the conversion guide on the package to match the sweetness of 1/4 cup of powdered erythritol.

  • Peanut Butter: Make sure you’re using unsweetened, natural peanut butter (no added sugar). You can also use almond butter or cashew butter for a different flavor.

  • Add-ins: You can mix in some sugar-free chocolate chips, shredded coconut, or a few crushed keto-friendly cookies for extra texture and flavor.

  • Salted Fudge: Add a sprinkle of sea salt on top for a salted chocolate peanut butter fudge version!
