Steak, Shrimp, and Veggie Skillet

This Steak, Shrimp, and Veggie Skillet is a perfect one-pan meal for when you want something quick, flavorful, and satisfying. It’s packed with protein and veggies, and the skillet method gives everything that perfect sear!

Ingredients:

  • 1 lb (450g) steak (ribeye, sirloin, or flank steak works well)

  • 12 oz (340g) shrimp (peeled and deveined)

  • 2 tbsp olive oil (divided)

  • 1 red bell pepper, sliced

  • 1 yellow bell pepper, sliced

  • 1 small zucchini, sliced into half-moons

  • 1 small onion, sliced

  • 2 cloves garlic, minced

  • Salt and pepper, to taste

  • 1 tsp paprika

  • 1 tsp dried oregano or thyme

  • 1 tbsp butter

  • Fresh parsley (optional, for garnish)

  • Lemon wedges (optional, for serving)

Instructions:

  1. Prepare the steak:

    • Season the steak with salt, pepper, paprika, and oregano (or thyme) on both sides. Let it sit at room temperature for about 10 minutes while you prep the veggies.

  2. Cook the steak:

    • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once the pan is hot, add the steak and cook to your desired level of doneness (about 4-5 minutes per side for medium-rare, depending on thickness). Remove the steak from the skillet and let it rest on a plate.

  3. Cook the shrimp:

    • In the same skillet, add the remaining tablespoon of olive oil. Add the shrimp and cook for about 2-3 minutes per side until they are pink and opaque. Remove the shrimp and set aside with the steak.

  4. Cook the veggies:

    • In the same skillet, melt the butter over medium heat. Add the sliced onion, bell peppers, and zucchini. Sauté for about 5-7 minutes until the veggies are tender and starting to caramelize. Add the minced garlic and cook for another minute until fragrant.

  5. Combine everything:

    • Slice the steak against the grain into thin strips. Add the steak and shrimp back into the skillet with the veggies. Toss everything together to combine and heat through for a couple more minutes.

  6. Serve:

    • Garnish with fresh parsley and serve with lemon wedges on the side if you like a little citrusy zing.

Tips:

  • You can customize the veggies to your liking—mushrooms, cherry tomatoes, or asparagus would all be great additions!

  • If you like a little kick, you can add red pepper flakes or drizzle with hot sauce for extra flavor.

  • For a low-carb option, serve the skillet as is or pair it with a side of cauliflower rice.
