Zero Point Strawberry Ice Cream (WW-Friendly)

Ingredients:

  • 2 cups frozen strawberries

  • 1 cup non-fat Greek yogurt (plain)

  • 1 tbsp lemon juice (optional, to enhance flavor)

  • 1 tsp vanilla extract

  • Stevia or other sweeteners to taste (I’d suggest about 1-2 tsp of Stevia or equivalent sweetener)

  • 1/2 cup unsweetened almond milk (or any other low-calorie milk of choice)

  • A pinch of salt (optional, to bring out the flavors)

Instructions:

1. Blend the Strawberries:

  • In a blender or food processor, blend the frozen strawberries until they form a smooth puree. If they’re too frozen to blend smoothly, you can let them sit out for a few minutes or add a tablespoon or two of almond milk to help with blending.

2. Add the Other Ingredients:

  • Once the strawberries are pureed, add the non-fat Greek yogurt, lemon juice, vanilla extract, sweetener, and almond milk to the blender. Blend everything until smooth and creamy.

  • Taste and adjust sweetness by adding more sweetener, if necessary. You can also add a pinch of salt to help balance the flavors.

3. Freeze the Mixture:

  • Pour the strawberry mixture into a loaf pan or shallow dish. Smooth the top and cover it with plastic wrap or a lid.

  • Place the pan in the freezer and let it freeze for at least 3-4 hours, or until solid. You can also let it freeze overnight.

4. Serve:

  • Before serving, allow the ice cream to sit at room temperature for a few minutes to soften just slightly, making it easier to scoop.

  • Scoop and enjoy! You can also add fresh strawberry slices or a sprinkle of shredded coconut for extra flavor if desired.

Optional Tips:
