Hearty Beef and Rice Casserole with Cheese

Ingredients:

  • 1 lb (450g) ground beef

  • 1 cup uncooked white rice (you can also use brown rice, but it may need more liquid and a longer cooking time)

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  • 1 can (14.5 oz) diced tomatoes, drained (or use fresh tomatoes, chopped)

  • 1 can (8 oz) tomato sauce

  • 1 1/2 cups beef broth (or chicken broth for a milder flavor)

  • 1 teaspoon Worcestershire sauce (optional, for extra depth)

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried basil

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon salt (or to taste)

  • 1 cup shredded cheddar cheese (or a mix of cheddar and mozzarella)

  • 1/2 cup sour cream or cream cheese (optional, for extra creaminess)

  • 1 tablespoon olive oil (for browning the beef)

  • Fresh parsley (optional, for garnish)

Instructions:

  1. Cook the Ground Beef:

    • In a large skillet, heat 1 tablespoon olive oil over medium heat.

    • Add the ground beef and cook, breaking it up with a spatula, until browned and fully cooked (about 6-8 minutes). Drain any excess fat.

    • Add the chopped onion and minced garlic to the skillet and sauté for 2-3 minutes, until softened and fragrant.

  2. Prepare the Rice Mixture:

    • In a large mixing bowl, combine the cooked beef and onion mixture with the uncooked rice, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce (if using), oregano, basil, salt, and pepper. Stir until everything is well mixed.

    • If you like your casserole extra creamy, stir in sour cream or cream cheese at this point.

  3. Assemble the Casserole:

    • Preheat your oven to 375°F (190°C).

    • Transfer the rice and beef mixture into a greased 9×13-inch baking dish (or similar-sized casserole dish).

    • Cover the dish with aluminum foil to help it cook evenly and prevent it from drying out.

  4. Bake the Casserole:

    • Bake in the preheated oven for 30 minutes, or until the rice is tender and the liquid is absorbed.

    • After 30 minutes, remove the foil and sprinkle the shredded cheese evenly over the top.

    • Return the casserole to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  5. Serve:

    • Let the casserole cool for a few minutes before serving.

    • Garnish with chopped fresh parsley for a touch of color and freshness.


Additional Tips and Variations:

  • Vegetables: Add some veggies to the casserole for extra flavor and nutrition. Chopped bell peppers, peas, corn, or spinach all work well.

  • Cheese: Feel free to mix up the cheese combination. Monterey Jack, mozzarella, or even a bit of Parmesan can be used alongside cheddar.

  • Spice It Up: If you like a bit of heat, add some chopped green chilies or a pinch of red pepper flakes.

  • Brown Rice: If using brown rice, you may need to increase the baking time and add a little more broth (about 1/2 cup more) since brown rice takes longer to cook.

  • Freezer-Friendly: This casserole can be made ahead and frozen. Just assemble it, cover tightly, and freeze before baking. When ready to bake, thaw it overnight in the fridge and then bake as directed.
