Homemade Mexican Pizza is a fun, delicious, and customizable dish that brings together the best of both Mexican and pizza flavors. It’s crispy, cheesy, and full of flavor with a perfect combination of beans, seasoned meat, and fresh toppings. Here’s a simple and tasty recipe to make your own Mexican pizza at home!

Ingredients:

For the Pizza:

  • 2 flour tortillas (10-inch size, or you can use corn tortillas if you prefer)

  • 1 cup refried beans (store-bought or homemade)

  • 1/2 pound ground beef (or ground chicken/turkey for a lighter option)

  • 1 packet taco seasoning (or homemade taco seasoning)

  • 1/2 cup salsa (mild or spicy, depending on preference)

  • 1 1/2 cups shredded cheese (cheddar, Mexican blend, or mozzarella)

  • 1/4 cup sliced black olives (optional)

  • 1/4 cup sliced green onions (optional)

  • 1/2 cup diced tomatoes

  • 1/4 cup shredded lettuce (for garnish)

  • Sour cream and guacamole (for topping)

For Homemade Taco Seasoning (optional):

  • 1 tablespoon chili powder

  • 1 teaspoon cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

Instructions:

1. Prepare the Meat:

  • In a medium skillet, cook the ground beef (or ground chicken/turkey) over medium heat until browned, breaking it up into small crumbles as it cooks.

  • Once the meat is cooked through, drain any excess fat. Add the taco seasoning (or homemade seasoning) and a few tablespoons of water (as directed on the seasoning packet), and simmer for about 3-4 minutes until the meat is coated and the flavors meld. Set aside.

2. Prepare the Tortillas:

  • Preheat your oven to 400°F (200°C).

  • Place a large skillet over medium heat and lightly warm the tortillas for 1-2 minutes on each side, just until they become slightly crispy. This step adds a nice crunch and helps prevent them from becoming soggy.

  • Alternatively, you can bake the tortillas in the oven for about 5-7 minutes, flipping once, until crispy.

3. Assemble the Pizza:

  • Spread a thin layer of refried beans on each tortilla, leaving a small border around the edges.

  • Spoon some salsa on top of the beans for extra flavor.

  • Evenly distribute the seasoned meat mixture over the tortillas.

  • Sprinkle with a generous amount of shredded cheese.

4. Bake the Pizza:

  • Place the assembled tortillas directly on a baking sheet or on the oven rack and bake at 400°F (200°C) for 7-10 minutes, or until the cheese is melted and bubbly, and the tortillas are crisp.

5. Add Toppings:

  • Once out of the oven, top the pizza with diced tomatoes, green onions, and black olives (if using).

  • Garnish with shredded lettuce for crunch and a fresh touch.

6. Serve:

  • Slice your Mexican pizza into wedges, then serve with sides of sour cream and guacamole for extra flavor.


Optional Add-ins and Variations:

  • Chicken or Shrimp: Swap out the ground beef for grilled chicken or shrimp for a lighter option.

  • Spicy Kick: Add sliced jalapeños or drizzle with hot sauce for extra spice.

  • Veggie Version: Add sautéed bell peppers, onions, or zucchini to make it more veggie-packed.

  • Beans: Use black beans or pinto beans instead of refried beans for a different texture.
