GARLIC MUSHROOMS AND BROCCOLI

Garlic mushrooms and broccoli make a delicious, healthy side dish that pairs perfectly with a variety of meals. It’s quick, easy, and bursting with flavor. Here’s a simple recipe to make it:

Garlic Mushrooms and Broccoli

Ingredients:

  • 1 lb (450g) mushrooms (button, cremini, or any variety you prefer), sliced

  • 1 medium head of broccoli (or about 3 cups florets)

  • 3 tablespoons olive oil (or butter)

  • 4-5 cloves garlic, minced

  • 1 tablespoon soy sauce (optional, for extra umami flavor)

  • Salt and pepper (to taste)

  • 1 teaspoon dried thyme or rosemary (optional, for added flavor)

  • Lemon juice (optional, for a fresh finish)

  • Parmesan cheese (optional, for sprinkling)

Instructions:

  1. Prepare the Broccoli:
    Cut the broccoli into bite-sized florets. You can steam or blanch the broccoli for a few minutes until tender-crisp, or if you prefer, you can sauté it with the mushrooms later.

  2. Sauté the Mushrooms:
    In a large skillet, heat 2 tablespoons of olive oil or butter over medium heat. Add the sliced mushrooms to the pan. Cook them for 5-7 minutes until they begin to soften and release their moisture. Stir occasionally to avoid burning.

  3. Add Garlic and Seasonings:
    Once the mushrooms are browned and tender, add the minced garlic to the skillet. Stir for about 1 minute until the garlic is fragrant (but be careful not to burn it). Season with salt, pepper, and dried herbs (thyme or rosemary), if using.

  4. Add the Broccoli:
    If you’ve steamed or blanched the broccoli, add it to the pan with the mushrooms. If you’re sautéing everything together, add the raw broccoli florets now. Pour in the soy sauce (if using), and stir well to combine. Cook for another 3-5 minutes until the broccoli is tender but still vibrant green.

  5. Finish with Lemon & Parmesan (optional):
    For a fresh, bright finish, squeeze a bit of lemon juice over the dish just before serving. You can also sprinkle some grated Parmesan cheese for added richness.

  6. Serve:
    Serve the garlic mushrooms and broccoli as a side dish to any main course like grilled chicken, steak, or pasta.

Tips:

  • For extra flavor: Add a splash of white wine or vegetable broth to the pan after cooking the mushrooms to create a quick sauce.

  • Add nuts: For a little crunch, you can sprinkle some toasted pine nuts or almonds on top of the finished dish.

  • Make it a main: Toss some cooked quinoa or rice into the mix for a hearty, veggie-packed meal.
