Salty Pancakes with Ham and Cheese

Ingredients:

For the Pancake Batter:

  • 1 cup all-purpose flour

  • 1 tablespoon baking powder

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 large egg

  • 3/4 cup milk (whole, 2%, or any non-dairy milk)

  • 2 tablespoons melted butter (or olive oil)

  • 1/4 teaspoon garlic powder (optional, for extra flavor)

For the Filling:

  • 1/2 cup ham, diced (you can use cooked ham, or sliced deli ham)

  • 1/2 cup shredded cheese (cheddar, Swiss, or Gruyère are great choices)

  • 2 tablespoons finely chopped chives or green onions (optional, for garnish)

For Cooking:

  • Butter or oil, for greasing the skillet


Instructions:

1. Prepare the Pancake Batter:

  • In a large bowl, whisk together the flour, baking powder, salt, and pepper. If you’re adding garlic powder for extra flavor, mix that in as well.

  • In a separate bowl, whisk the egg, milk, and melted butter together.

  • Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t over-mix; the batter should still have some lumps. If the batter is too thick, you can add a little more milk to reach your desired consistency.

2. Prepare the Filling:

  • Dice the ham into small cubes or strips, and grate or shred the cheese of your choice.

  • Set aside the ham and cheese mixture. You’ll be adding them to the pancakes while they cook.

3. Cook the Pancakes:

  • Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

  • Pour a small amount of pancake batter (about 1/4 cup) onto the skillet, forming a pancake. Let it cook for about 2 minutes or until bubbles start to form on the surface.

  • Sprinkle a small amount of the diced ham and shredded cheese onto the pancake, then cover with a little more batter (just enough to cover the filling).

  • Flip the pancake and cook for another 1-2 minutes, or until golden brown on both sides and the cheese has melted inside.

4. Serve:

  • Remove the pancake from the skillet and place it on a plate. Repeat with the remaining batter, ham, and cheese until all the pancakes are cooked.

  • Optionally, garnish with chopped chives or green onions for a burst of color and fresh flavor.

5. Enjoy:

  • Serve these salty pancakes warm, and enjoy them with a side salad, a dollop of sour cream, or a drizzle of hot sauce for an extra kick.
