A Fruit Salad Cheesecake combines the rich and creamy texture of cheesecake with the refreshing sweetness of a fruit salad. It’s a delightful dessert perfect for any occasion. Here’s a simple recipe to make this tasty treat:

Ingredients:

For the crust:

  • 1 ½ cups graham cracker crumbs (about 10 graham crackers crushed)
  • 3 tablespoons sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 6 tablespoons butter, melted

For the cheesecake filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream

For the fruit topping:

  • 2 cups strawberries, sliced
  • 1 cup blueberries
  • 1 cup pineapple chunks
  • 1 cup kiwi, peeled and sliced
  • 1/2 cup mango, diced (optional)
  • 2 tablespoons honey or maple syrup (optional, for sweetness)

Instructions:

1. Prepare the crust:

  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, combine graham cracker crumbs, sugar, and cinnamon (if using). Add the melted butter and stir until the mixture is well combined.
  • Press the mixture into the bottom of a 9-inch springform pan or pie dish to form an even crust.
  • Bake for 8-10 minutes until slightly golden. Allow the crust to cool completely.

2. Make the cheesecake filling:

  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add the powdered sugar and vanilla extract, and continue to beat until fully incorporated.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy. This creates the light and creamy texture for the cheesecake.

3. Assemble the cheesecake:

  • Spread the cheesecake filling evenly over the cooled crust, smoothing it out with a spatula.
  • Refrigerate the cheesecake for at least 4 hours, or overnight for best results, to allow it to firm up.

4. Add the fruit topping:

  • Before serving, arrange the sliced strawberries, blueberries, pineapple chunks, kiwi, and mango (if using) on top of the cheesecake.
  • Drizzle honey or maple syrup over the fruit for added sweetness, if desired.

5. Serve:

  • Slice and serve the cheesecake with its beautiful fruit topping. Enjoy the perfect balance of creamy cheesecake and fresh fruit!
