  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 large eggs
  • 1/2 cup non-fat Greek yogurt (for moisture and protein)
  • 1/4 cup unsweetened applesauce (helps keep it moist and lower in fat)
  • 1/4 cup fresh lemon juice (about 2 lemons)
  • Zest of 2 lemons
  • 1 tsp vanilla extract
  • 1/4 cup water or almond milk (for added moisture)

For the Glaze (Optional):

  • 1/4 cup powdered sweetener (like Swerve powdered)
  • 1 tbsp fresh lemon juice
  • 1 tsp water (or more, to achieve desired glaze consistency)

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C) and line a loaf pan (9×5 inches) with parchment paper or lightly grease it.

2. Prepare the Wet Ingredients:

  • In a large bowl, whisk together the eggs, Greek yogurt, applesauce, fresh lemon juice, lemon zest, and vanilla extract until smooth and well combined.

3. Mix the Dry Ingredients:

  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
