Ingredients:

  • 2 cloves garlic, minced

  • Salt and pepper, to taste
  • 1/4 cup water (or as needed to achieve a smooth consistency)

For the Loaded Toppings:

  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup cucumber, finely diced
  • 1/4 cup red onion, finely diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled (optional for a creamy finish)
  • 1/4 cup roasted red peppers, chopped (optional)
  • 1/4 cup fresh parsley, chopped (for garnish)
  • 1 tbsp olive oil (for drizzling)
  • 1 tbsp sesame seeds (optional, for crunch)
  • 1 tbsp paprika (or smoked paprika for a smoky flavor)

Instructions:

Step 1: Make the Hummus

  1. Blend the hummus: In a food processor or blender, combine the chickpeas, tahini, olive oil, lemon juice, garlic, and ground cumin. Season with salt and pepper to taste.
  2. Add water: Start by adding about 1/4 cup of water, and blend until smooth. Add more water, one tablespoon at a time, until you reach your desired consistency—smooth but still creamy.
  3. Adjust seasoning: Taste and adjust the seasoning, adding more salt, pepper, or lemon juice if needed.

Step 2: Assemble the Dip

  1. Layer the hummus: Spread the freshly made hummus evenly onto the bottom of a serving dish or platter. You can use a round or oval dish for a classic look, or even a shallow bowl or plate.
  2. Top with veggies: Begin layering with the diced cherry tomatoes, cucumber, and red onion. These fresh veggies add a nice crunch and flavor contrast to the creamy hummus.
  3. Add the olives: Sprinkle the sliced Kalamata olives over the top for a salty and briny bite.
  4. Roasted red peppers and feta: Add the roasted red peppers and crumbled feta (if using) for a creamy, tangy touch.

Step 3: Garnish and Serve

  1. Finish with a drizzle: Drizzle a little olive oil over the top of the dip for extra richness.
