Sourdough Discard Tortillas are a fantastic way to use up your sourdough starter discard while making something delicious and versatile! These tortillas are soft, slightly tangy, and full of flavor. They’re perfect for tacos, wraps, or even as a side to dips. Best of all, they’re incredibly easy to make.

Here’s a simple Sourdough Discard Tortillas recipe:

Sourdough Discard Tortillas

Ingredients:

  • 1 cup sourdough starter discard (room temperature, unfed)
  • 1 1/2 cups all-purpose flour (plus more for rolling)
  • 1/4 tsp salt
  • 1 tbsp olive oil (or vegetable oil)
  • 1/4 cup warm water (you may need a little more depending on dough texture)

Instructions:

Step 1: Combine the Ingredients
  1. In a large mixing bowl, combine the sourdough starter discard, flour, and salt.
  2. Add the olive oil and warm water to the mixture, stirring until everything starts to come together into a rough dough.
Step 2: Knead the Dough
  1. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until it becomes smooth and elastic. You can add more flour if the dough feels too sticky, but be careful not to add too much.
  2. Once the dough is smooth, cover it with a clean kitchen towel or plastic wrap and let it rest for 30 minutes. This helps relax the gluten and makes the dough easier to roll out.
Step 3: Divide and Roll Out
  1. After resting, divide the dough into 8 equal portions (for medium-sized tortillas). You can make them smaller or larger depending on your preference.
  2. Roll each portion into a ball, and then flatten each ball into a disc using a rolling pin. Roll each disc as thin as possible, about 6-8 inches in diameter, on a lightly floured surface.
Step 4: Cook the Tortillas
  1. Heat a cast-iron skillet or griddle over medium-high heat. It’s important that the pan is very hot but not smoking.
  2. Place one tortilla in the hot pan and cook for about 1-2 minutes on each side, or until you see large bubbles forming on the surface. Flip the tortilla and cook the second side for another 1-2 minutes. You should get light golden brown spots.
  3. Repeat this process with the remaining tortillas, placing the cooked tortillas on a plate and covering them with a clean kitchen towel to keep them warm and soft.
Step 5: Serve
  1. Serve the tortillas warm with your favorite fillings. They’re perfect for tacos, wraps, or even as a side with chili, soups, or dips.

Tips:

  • Adjusting texture: If the dough feels too stiff or dry, add a bit more water, one tablespoon at a time, until it reaches a smooth, pliable consistency.
  • Storage: You can store leftover tortillas in an airtight container at room temperature for 2-3 days. For longer storage, wrap them in parchment paper and store them in the freezer for up to 1 month.
  • Flavor variations: For added flavor, you can mix in some herbs like cilantro or garlic powder into the dough, or even a pinch of chili powder for a little heat.
  • Make them thin: For ultra-thin tortillas, roll the dough as thin as possible, but be gentle to prevent tearing.
