The No-Bake Classic Woolworth Cheesecake is a delicious, creamy, and simple dessert that doesn’t require any baking. It’s based on the famous Woolworth cheesecake that many people loved from the old Woolworth stores in the mid-20th century. This cheesecake is made with a smooth cream cheese filling, a buttery graham cracker crust, and topped with a sweet cherry or fruit topping. It’s an easy recipe that’s perfect for hot days or when you don’t want to turn on the oven.

Here’s how to make it:

No-Bake Classic Woolworth Cheesecake

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs (about 12 graham crackers)
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the filling:

  • 8 oz cream cheese, softened
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla extract
  • 1/2 tsp lemon juice (optional, for a little tartness)
  • 1/4 cup granulated sugar

For the topping:

  • 1 can (21 oz) cherry pie filling (or fruit topping of your choice)

Instructions:

Step 1: Make the Graham Cracker Crust
  1. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Stir until the mixture is well combined and the crumbs are fully coated with butter.
  2. Press the mixture into the bottom of a 9-inch springform pan or pie dish. Use the back of a spoon or your fingers to firmly press the crust down and around the sides of the pan.
  3. Place the crust in the fridge while you make the filling to let it set and firm up.
Step 2: Make the Cheesecake Filling
  1. In a large mixing bowl, beat the cream cheese with a hand mixer or stand mixer until smooth and creamy.
  2. Add the powdered sugar, granulated sugar, and vanilla extract (and lemon juice, if using), and continue beating until well combined.
  3. In a separate bowl, beat the heavy whipping cream until stiff peaks form (you can use a hand mixer for this). Be careful not to overwhip.
  4. Gently fold the whipped cream into the cream cheese mixture until smooth and well blended.
Step 3: Assemble the Cheesecake
  1. Pour the cheesecake filling into the prepared graham cracker crust and spread it out evenly with a spatula.
  2. Cover the cheesecake with plastic wrap and refrigerate for at least 4-6 hours (or overnight) to let it firm up and set properly.
Step 4: Add the Topping
  1. After the cheesecake has set, spoon the cherry pie filling (or your choice of fruit topping) evenly over the top of the cheesecake. You can also add fresh fruit like sliced strawberries, blueberries, or raspberries for a fresh touch.
Step 5: Serve
  1. Slice the cheesecake into wedges and serve chilled. Enjoy the creamy, light texture with the perfect crunch of the graham cracker crust and sweet topping!

Tips:

  • Flavor variations: You can experiment with different types of fruit toppings (like blueberry, strawberry, or peach) or even make a homemade fruit compote if you’re feeling fancy.
  • Whipped topping: If you prefer a lighter filling, you can substitute part or all of the heavy cream with whipped topping (Cool Whip), though it will alter the texture slightly.
  • Make it a chocolate version: Add a bit of melted chocolate into the filling for a chocolate-flavored cheesecake, or sprinkle some cocoa powder into the crust for extra flavor.
