Sweet milk fudge

Sweet Milk Fudge (also known as Burfi or Milk Fudge) is a rich and creamy dessert made with condensed milk, sugar, and milk powder. It’s a delightful treat with a smooth texture and a hint of sweetness. Here’s a simple recipe to make this indulgent dessert!

Sweet Milk Fudge (Burfi)

Ingredients:

  • 1 can (14 oz) sweetened condensed milk
  • 1 cup full-fat milk powder
  • 1/4 cup ghee (clarified butter) or unsalted butter
  • 1/2 cup whole milk
  • 1/2 cup sugar (adjust to your sweetness preference)
  • 1/2 tsp cardamom powder (optional, for flavor)
  • 1/4 cup chopped nuts (cashews, almonds, pistachios – optional, for garnish)
  • Pinch of saffron strands (optional, for color and aroma)

Instructions:

Step 1: Prepare the Pan
  1. Grease a 9×9-inch square pan (or a similar-sized dish) with a little ghee or butter. You can also line it with parchment paper to make it easier to remove the fudge later.
Step 2: Cook the Fudge Mixture
  1. In a heavy-bottomed non-stick pan, heat the ghee over medium heat. Once melted, add the milk and bring it to a gentle simmer.
  2. Add the sweetened condensed milk, milk powder, and sugar to the pan. Stir continuously to avoid lumps.
  3. Reduce the heat to low and keep stirring the mixture, ensuring it doesn’t stick to the bottom of the pan. Cook for about 10-12 minutes, or until it thickens and begins to come away from the sides of the pan.
Step 3: Add Flavor and Texture
  1. Add the cardamom powder and saffron strands (if using), and stir them in. Continue cooking for another 2-3 minutes until the mixture is thick and starts to pull away from the sides of the pan, forming a soft dough-like consistency.
Step 4: Set the Fudge
  1. Pour the thickened fudge mixture into the prepared pan. Use a spatula to smooth the top and evenly spread it out.
  2. Garnish with chopped nuts if desired. Gently press them into the fudge.
Step 5: Cool and Cut
  1. Allow the fudge to cool down to room temperature. It will set as it cools.
  2. Once it’s cooled and firm, cut it into small squares or diamonds.

Tips:

  • Flavor variations: You can add a bit of rose water or vanilla extract for different flavor profiles.
  • To make it richer: You can add cream instead of some of the milk for a creamier texture.
  • Store: Keep the fudge in an airtight container at room temperature for up to a week, or refrigerate for a longer shelf life.

This Sweet Milk Fudge is incredibly sweet and satisfying, and the cardamom adds a lovely aromatic touch. Perfect for festive occasions or simply when you want something indulgent!
