Strawberry Cheesecake

A Strawberry Cheesecake is always a hit! The creamy texture of the cheesecake combined with the sweet and tart strawberry topping makes for a perfect dessert. Here’s a classic recipe for you:

No-Bake Strawberry Cheesecake

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted

For the cheesecake filling:

  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (chilled)
  • 1/2 cup sour cream

For the strawberry topping:

  • 1 lb fresh strawberries (sliced)
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice (optional, but enhances flavor)

Instructions:

  1. Make the crust:
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are fully coated and the mixture has a sandy texture.
    • Press the mixture into the bottom of a 9-inch springform pan (or any pan with a removable bottom). Use the back of a spoon to pack it down evenly.
    • Chill the crust in the fridge for about 15-20 minutes to help it firm up.
  2. Prepare the cheesecake filling:
    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
    • Add the powdered sugar and vanilla extract, and continue beating until well combined.
    • In a separate bowl, beat the chilled heavy whipping cream until stiff peaks form.
    • Gently fold the whipped cream into the cream cheese mixture. Add the sour cream and mix until everything is smooth and fully incorporated.
  3. Assemble the cheesecake:
    • Spoon the cheesecake filling onto the chilled crust, spreading it evenly with a spatula.
    • Cover the cheesecake and refrigerate for at least 4 hours or overnight to set.
  4. Make the strawberry topping:
    • While the cheesecake is setting, combine the sliced strawberries, sugar, and lemon juice in a bowl. Let it sit for 15-20 minutes to release the strawberry juices and form a syrupy topping.
  5. Serve:
    • Once the cheesecake is set, top it with the sweetened strawberries.
    • Slice and enjoy!

Optional Garnish:

  • Whipped cream or extra whole strawberries can be added as a garnish for an extra touch.
