Creamy Caramel Cheesecake Delight

Ingredients:

For the crust:

  • 1 1/2 cups graham cracker crumbs (about 10-12 full crackers)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the cheesecake filling:

  • 2 (8 oz) packages cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream

For the caramel topping:

  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt (optional, to balance the sweetness)

Instructions:

  1. Make the crust:

    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until the mixture is well combined and the crumbs are evenly coated with butter.
    • Press the graham cracker mixture into the bottom of a 9-inch springform pan or a pie dish. Use the back of a spoon to press it down firmly, creating an even layer. Refrigerate while you prepare the filling to help it set.
  2. Prepare the cheesecake filling:

    • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes.
    • Add the powdered sugar and vanilla extract, and continue to beat until fully incorporated and smooth.
    • In a separate bowl, whip the heavy cream until stiff peaks form (you can do this with an electric mixer or by hand). Gently fold the whipped cream into the cream cheese mixture until well combined and smooth. Be careful not to deflate the whipped cream too much.
  3. Assemble the dessert:

    • Spoon the cheesecake filling onto the prepared crust. Spread it out evenly with a spatula, smoothing the top.
    • Refrigerate the cheesecake for at least 4 hours, or overnight if possible, to allow it to set and firm up.
  4. Make the caramel topping:

    • In a medium saucepan over medium heat, melt the brown sugar and butter together, stirring frequently until the mixture becomes smooth and starts to bubble.
    • Slowly pour in the heavy cream while stirring, and continue to cook for another 1-2 minutes until the caramel thickens slightly.
    • Remove the saucepan from the heat, stir in the vanilla extract, and add a pinch of salt if desired. Let the caramel cool slightly.
  5. Top the cheesecake:

    • Once the cheesecake has set, pour the caramel sauce over the top, spreading it evenly with a spatula. If you have extra caramel, drizzle it on top or around the edges for extra decadence.
  6. Serve:

    • Slice the cheesecake and serve chilled. You can garnish with additional caramel sauce, whipped cream, or even some chopped nuts (like pecans or walnuts) if desired.

  • Make-ahead: This dessert is great for making ahead of time. In fact, it gets better as it chills because the flavors have more time to meld.
