Garlic Butter Steak Bites

Ingredients:

  • 1 lb (450g) steak (such as sirloin, ribeye, or flank steak)
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary or thyme, chopped (optional)
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Steak:
    Cut the steak into bite-sized cubes, about 1-inch pieces. Season generously with salt and pepper.

  2. Cook the Steak Bites:
    In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the steak bites in a single layer (don’t overcrowd the pan—work in batches if needed).
    Sear the steak for about 2-3 minutes on each side, depending on your desired doneness (rare, medium-rare, etc.).
    Once cooked, remove the steak bites from the skillet and set them aside on a plate.

  3. Make the Garlic Butter:
    In the same skillet, reduce the heat to medium. Add the butter, and once it melts, add the minced garlic and herbs (if using).
    Sauté for about 30 seconds to 1 minute, until the garlic is fragrant and golden.

  4. Toss the Steak Bites in Garlic Butter:
    Return the steak bites to the skillet, tossing them in the garlic butter sauce to coat evenly. Cook for another minute or two to let the steak absorb the flavor.
    Taste and adjust seasoning with more salt and pepper if needed.

  5. Serve:

Cheesy Smashed Potatoes

Ingredients:

  • 2 lbs (900g) baby potatoes (or any small potatoes)
  • 4 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 2-3 garlic cloves, minced
  • Salt and pepper, to taste
  • Fresh parsley or chives for garnish

Instructions:

  1. Cook the Potatoes:
    Place the potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil.
    Cook the potatoes for 15-20 minutes, or until they are fork-tender. Drain the water and let the potatoes cool slightly.

  2. Smash the Potatoes:
    Transfer the potatoes to a large baking sheet or into a large bowl. Using a potato masher, gently smash the potatoes, keeping them a bit chunky (don’t mash them into a puree).

  3. Make the Cheese Sauce:
    In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
    Stir in the cream cheese, sour cream, and half of the cheddar cheese. Stir until smooth and creamy.

  4. Mix the Potatoes and Cheese:
    Pour the cheese sauce over the smashed potatoes and gently fold them together. Add the remaining cheddar cheese and the Parmesan cheese. Stir until the cheese is melted and the potatoes are creamy.
    Season with salt and pepper to taste.

  5. Bake (Optional):
    If you like your smashed potatoes with a bit of a crispy top, preheat your oven to 375°F (190°C). Spread the cheesy potatoes in an even layer on a baking sheet, and sprinkle a little extra cheddar cheese on top.
    Bake for about 10-15 minutes until the cheese is bubbly and golden.
