Here’s a recipe to make this indulgent treat:

Decadent Caramel Cornflake Cream Pie

Ingredients:

For the Crust:

  • 4 cups cornflakes (slightly crushed, but not powdery)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Filling:

  • 1 (8 oz) package cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups heavy whipping cream
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1/4 cup chopped toasted pecans or walnuts (optional, for added crunch)

For the Topping:

  • 1/4 cup caramel sauce (for drizzling)
  • Additional chopped nuts, if desired

Instructions:

1. Make the Cornflake Crust:

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the crushed cornflakes, sugar, and melted butter. Mix until the cornflakes are evenly coated with butter and sugar.
  • Press this mixture into the bottom and sides of a 9-inch pie dish, forming a crust.
  • Bake the crust in the preheated oven for about 10 minutes, or until golden and crisp. Remove from the oven and allow it to cool completely.

2. Prepare the Cream Filling:

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.
  • Add the powdered sugar and vanilla extract. Mix until everything is well combined.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until fully combined, creating a light, fluffy filling.

3. Assemble the Pie:

  • Once the cornflake crust has cooled, spread the cream filling evenly over the crust.
  • Drizzle 1/2 cup of caramel sauce over the top of the cream filling, swirling it gently with a spatula or knife to create a marbled effect.
  • If you like, sprinkle with chopped toasted nuts (pecans or walnuts) for extra crunch and flavor.

4. Chill and Serve:

  • Refrigerate the pie for at least 4 hours, or overnight, to allow the filling to set and the flavors to develop.
  • Before serving, drizzle more caramel sauce over the top and, if desired, garnish with extra chopped nuts.
