Sautéed Mushroom and Broccoli Stir-Fry

Ingredients:

  • 1 tbsp sesame oil (or olive oil)
  • 2 cups mushrooms, sliced (cremini, button, or shiitake work great)
  • 2 cups broccoli florets (fresh or frozen)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (optional, but adds a nice zing)
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp oyster sauce (optional, for more depth of flavor)
  • 1 tsp rice vinegar (or apple cider vinegar)
  • 1 tsp honey or maple syrup (optional, for a touch of sweetness)
  • 1/4 tsp red pepper flakes (optional, for a bit of heat)
  • Salt and pepper to taste
  • 1 tsp toasted sesame seeds (optional, for garnish)
  • Green onions (optional, for garnish)

Directions:

  1. Prepare the Vegetables:

    • Wash and cut the broccoli into small florets. If you’re using frozen broccoli, make sure it’s thawed and drained.
    • Slice the mushrooms evenly. If you’re using larger mushrooms like portobellos, slice them thinly to ensure even cooking.
  2. Blanch the Broccoli (optional but recommended):

    • To get the broccoli tender yet crisp, you can blanch it first. Bring a pot of water to a boil and add the broccoli florets. Boil for 2-3 minutes, then immediately transfer the broccoli into an ice bath to stop the cooking process. Drain well. Alternatively, you can skip this step and stir-fry the broccoli directly, but blanching helps preserve color and texture.
  3. Sauté the Mushrooms:

    • Heat the sesame oil in a large skillet or wok over medium-high heat.
    • Add the sliced mushrooms and cook, stirring occasionally, for about 5-7 minutes, until the mushrooms are golden brown and softened. Mushrooms release water as they cook, so allow them to cook off and crisp up.
  4. Add Garlic and Ginger:

    • Add the minced garlic and grated ginger to the pan with the mushrooms, and stir-fry for about 30 seconds, until fragrant.
  5. Stir-Fry the Broccoli:

    • Add the broccoli to the skillet with the mushrooms and garlic. Stir everything together and cook for 3-4 minutes, letting the broccoli heat through and soak up the flavors.
  6. Season the Stir-Fry:

    • Add the soy sauce, oyster sauce (if using), rice vinegar, honey (or maple syrup), and red pepper flakes to the pan. Stir well to coat the mushrooms and broccoli evenly in the sauce. Cook for another 1-2 minutes, allowing the sauce to thicken slightly.
  7. Finish and Serve:

    • Taste and adjust the seasoning with more salt, pepper, or soy sauce if needed.
    • Transfer the stir-fry to a serving dish and garnish with toasted sesame seeds and chopped green onions.

Tips:

  • Add-Ins: You can throw in additional vegetables like bell peppers, carrots, or snap peas for more color and texture.
  • Protein: If you’d like to make this a more substantial meal, consider adding cooked chicken, tofu, or shrimp.
  • Sauce Variations: You can swap the oyster sauce with hoisin sauce for a slightly sweeter twist, or even add a dash of sesame oil at the end for a richer flavor.
