Savory Meatloaf with Caramelized Onion

Ingredients:

For the caramelized onions:

  • 2 large onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar (optional, to help with caramelization)
  • Salt and pepper to taste

For the meatloaf:

  • 1 lb ground beef (80% lean is ideal)
  • 1/2 lb ground pork (optional, for extra flavor)
  • 1/2 cup breadcrumbs (preferably panko)
  • 1/2 cup milk
  • 2 large eggs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika (optional)
  • Salt and pepper to taste

Directions:

  1. Caramelize the Onions:

    • Heat the butter and olive oil over medium-low heat in a large skillet.
    • Add the sliced onions and a pinch of salt, cooking slowly, stirring occasionally for about 20-25 minutes, until they become golden brown and soft. Stir in the sugar (if using) after about 10 minutes to help the caramelization.
    • Once the onions are caramelized, set them aside to cool.
  2. Prepare the Meatloaf:

    • Preheat your oven to 375°F (190°C).
    • In a large bowl, combine the ground beef, ground pork (if using), breadcrumbs, milk, eggs, chopped onion, garlic, ketchup, Worcestershire sauce, thyme, oregano, paprika, salt, and pepper.
    • Add half of the caramelized onions to the mixture and mix gently until combined. The remaining onions will be used for topping.
    • Form the meat mixture into a loaf shape and place it in a greased or parchment-lined baking pan.
  3. Bake the Meatloaf:

    • Spread a thin layer of ketchup over the top of the meatloaf, if desired.
    • Bake in the preheated oven for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  4. Top with Caramelized Onions:

    • Once the meatloaf is done, remove it from the oven and let it rest for 5-10 minutes.
    • Top the meatloaf with the remaining caramelized onions and serve.

Serve this meatloaf with mashed potatoes, roasted vegetables, or a fresh salad for a comforting and satisfying meal.
