Peanut Butter Cookies

Here’s a classic Peanut Butter Cookie recipe that’s easy to make and deliciously chewy!

Ingredients:

  • 1 cup peanut butter (creamy or chunky, your choice!)
  • 1 cup sugar (white or you can use half brown sugar for extra flavor)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Pinch of salt (optional, depending on whether your peanut butter is salted)

Directions:

1. Preheat the oven:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or lightly grease it.

2. Make the dough:

  • In a large mixing bowl, combine the peanut butter, sugar, egg, vanilla extract, baking soda, and salt (if using).
  • Mix everything together until smooth and well combined. The dough will be slightly thick but should hold together.

3. Shape the cookies:

  • Scoop out tablespoon-sized portions of dough and roll them into balls.
  • Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  • Use a fork to flatten each cookie, making a crisscross pattern on top.

4. Bake:

  • Bake for 8–10 minutes, or until the edges are golden brown. Keep a close eye on them, as they can bake quickly.
  • The cookies will continue to firm up as they cool on the baking sheet, so don’t over-bake.

5. Cool and enjoy:

  • Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely.

Tips:

  • If you like a chewier cookie, you can reduce the baking time by a minute or two.
  • For a bit of extra flavor, try adding a handful of chocolate chips or a sprinkle of sea salt on top before baking.
  • You can also use natural peanut butter (the kind that separates) for a slightly different texture and flavor!
