Air Fryer Stuffed Potatoes

Here’s a tasty and easy recipe for Air Fryer Stuffed Potatoes. These potatoes are perfectly crispy on the outside and stuffed with a delicious filling of cheese, bacon, and sour cream!

Ingredients:

  • 4 medium russet potatoes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cooked bacon, crumbled (about 4-6 strips)
  • 1/4 cup sour cream
  • 2 tbsp green onions, chopped (optional)
  • 1/4 cup shredded mozzarella cheese (optional, for extra gooeyness)
  • Butter, for serving (optional)

Instructions:

1. Prep the Potatoes:

  • Wash and scrub the potatoes thoroughly, then pat them dry with a towel.
  • Pierce each potato several times with a fork.
  • Rub each potato with olive oil, then season with salt and pepper.

2. Cook the Potatoes:

  • Preheat your air fryer to 400°F (200°C).
  • Place the potatoes in the air fryer basket, ensuring they aren’t overcrowded. You may need to cook them in batches depending on the size of your air fryer.
  • Air fry for 35-40 minutes, flipping the potatoes halfway through, until the skins are crispy and the potatoes are fork-tender.

3. Stuff the Potatoes:

  • Once the potatoes are cooked, carefully remove them from the air fryer and let them cool for a few minutes.
  • Slice each potato in half lengthwise. Use a spoon to scoop out the inside, leaving a small border around the skin to maintain the shape.
  • In a bowl, mash the scooped-out potato with sour cream, crumbled bacon, and half of the shredded cheddar cheese. Season with salt and pepper to taste.
  • Spoon the mashed potato mixture back into the potato skins, mounding it up.

4. Air Fry the Stuffed Potatoes:

  • If you like, top the stuffed potatoes with the remaining cheddar cheese and mozzarella cheese for extra meltiness.
  • Place the stuffed potatoes back in the air fryer basket.
  • Air fry for an additional 5-7 minutes at 375°F (190°C), or until the cheese is melted and bubbly.

5. Serve:

  • Once they are golden and bubbly, remove the potatoes from the air fryer and sprinkle with chopped green onions for garnish.
  • Optionally, top with a small dollop of butter or additional sour cream.

Tips:

  • Feel free to customize the stuffing with your favorite ingredients! Try adding cooked chicken, sautéed mushrooms, or even some ranch dressing to the filling.
  • For a healthier version, you can skip the bacon or use turkey bacon.
