GARLIC BUTTER LOBSTER AND SCALLOPS

Here’s a delicious recipe for Garlic Butter Lobster and Scallops, perfect for a special dinner or a luxurious seafood treat!

Ingredients:

  • 2 lobster tails
  • 1/2 lb scallops (fresh or thawed if frozen)
  • 4 tbsp unsalted butter (divided)
  • 4 cloves garlic, minced
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Lemon wedges, for garnish

Instructions:

  1. Prepare the lobster tails:
    • Use kitchen scissors to cut through the top of the lobster shells, from the open end to the tail, and gently pull the lobster meat out, leaving the tail intact. This is called butterflying the lobster.
    • Alternatively, you can leave the lobster in the shell and cut just the top to expose the meat.
  2. Season the seafood:
    • Pat the lobster tails and scallops dry with a paper towel. Season both with salt and pepper.
  3. Cook the lobster tails:
    • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat.
    • Add the lobster tails, cut side down, and cook for about 2-3 minutes. Flip and cook for an additional 2-3 minutes on the other side, or until the lobster meat is opaque and fully cooked through. Remove the lobster tails from the skillet and set aside.
  4. Cook the scallops:
    • In the same skillet, add 1 tablespoon of butter over medium-high heat. Once melted and hot, add the scallops.
    • Sear the scallops for 2-3 minutes on each side until golden brown and cooked through (do not overcrowd the pan to avoid steaming). Remove the scallops from the skillet and set aside with the lobster.
  5. Make the garlic butter sauce:
    • In the same skillet, reduce the heat to medium. Add the remaining 2 tablespoons of butter and minced garlic. Sauté the garlic for about 1 minute until fragrant, being careful not to burn it.
    • Add the red pepper flakes, if using, and stir in the lemon juice. Scrape up any brown bits from the bottom of the pan.
  6. Combine and serve:
    • Return the cooked lobster tails and scallops to the skillet. Toss them gently in the garlic butter sauce for about 1-2 minutes to coat them in the flavors.
    • Garnish with freshly chopped parsley and serve with lemon wedges on the side for extra zest.

Tips:

  • For added flavor, you can sprinkle a little extra garlic powder or a squeeze of fresh lemon juice over the lobster and scallops just before serving.
  • Serve this with a side of pasta, rice, or a fresh green salad to complete the meal.
  • You can also add a dash of white wine or chicken broth to the skillet when making the sauce for more depth of flavor.
