It typically combines chicken, a creamy sauce, and some vegetables, all baked to perfection. Here’s a simple but delicious recipe for a Company Chicken Casserole that’s sure to impress:

Company Chicken Casserole

Ingredients:

  • 4 boneless, skinless chicken breasts (cooked and shredded)
  • 1 can (10.5 oz) cream of chicken soup (you can use low-sodium or homemade for a healthier option)
  • 1 cup sour cream (or plain Greek yogurt for a lighter option)
  • 1 cup shredded cheddar cheese (divided)
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 cup frozen peas (or any vegetable of your choice like broccoli or carrots)
  • 1 cup breadcrumbs (panko or regular)
  • 2 tbsp melted butter
  • Salt and pepper to taste

Instructions:

1. Preheat Oven:

  • Preheat your oven to 350°F (175°C).

2. Prepare Chicken:

  • Cook and shred the chicken. If you don’t have cooked chicken on hand, you can bake or boil the chicken breasts until fully cooked (about 20-30 minutes), then shred it with a fork or chop it into bite-sized pieces.

3. Make the Casserole Mixture:

  • In a large bowl, combine the cream of chicken soup, sour cream, ¾ cup shredded cheddar cheese, Parmesan cheese, garlic powder, onion powder, paprika, and a pinch of salt and pepper. Stir until smooth and well combined.

4. Add Chicken and Vegetables:

  • Stir the shredded chicken and peas (or your choice of vegetables) into the mixture. Make sure everything is well coated.

5. Assemble the Casserole:

  • Pour the chicken mixture into a greased 9×13-inch baking dish and spread it out evenly.

6. Prepare the Topping:

  • In a small bowl, combine the breadcrumbs with the melted butter. Mix well to ensure the breadcrumbs are coated in butter. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

7. Bake:

  • Bake the casserole in the preheated oven for about 30-35 minutes, or until the top is golden brown and the casserole is bubbly.

8. Add Remaining Cheese:

  • After 30-35 minutes, sprinkle the remaining ¼ cup of shredded cheddar cheese over the top and return it to the oven for another 5-10 minutes, or until the cheese is melted and bubbly.

9. Serve and Enjoy:

  • Let the casserole rest for a few minutes before serving. Serve with a side salad or crusty bread for a complete meal.

This casserole is creamy, cheesy, and comforting, with the option to add your favorite veggies or extra seasonings. You can even make it ahead of time and bake it when you’re ready to serve. It’s perfect for company dinners, potlucks, or even a family meal.
