Roasted Strawberry Whipped Ricotta Toast

Ingredients:

  • For the Roasted Strawberries:

    • 1 pint fresh strawberries, hulled and halved
    • 1 tbsp olive oil
    • 1 tbsp honey (or maple syrup)
    • 1/2 tsp vanilla extract
    • Pinch of salt
  • For the Whipped Ricotta:

    • 1 cup whole milk ricotta cheese (use fresh ricotta for the best texture)
    • 2 tbsp honey or maple syrup (adjust to sweetness)
    • 1 tsp vanilla extract
    • 1-2 tbsp heavy cream or milk (for a creamier texture)
    • Pinch of salt
  • For the Toast:

    • 4 slices of your favorite bread (sourdough, whole grain, or baguette work well)
    • Olive oil (for brushing)
    • Optional toppings: Fresh basil, mint, or lemon zest for garnish

Instructions:

1. Roast the Strawberries:

  • Preheat your oven to 375°F (190°C).
  • In a bowl, toss the strawberries with olive oil, honey, vanilla extract, and a pinch of salt.
  • Spread the strawberries in a single layer on a baking sheet lined with parchment paper or a silicone mat.
  • Roast for 15-20 minutes, or until the strawberries have softened and caramelized, stirring halfway through.
  • Once done, remove from the oven and set aside to cool slightly.

2. Make the Whipped Ricotta:

  • In a food processor or a bowl using an electric mixer, combine the ricotta cheese, honey (or maple syrup), and vanilla extract.
  • Blend until smooth and creamy. If the ricotta is too thick, add heavy cream or milk a tablespoon at a time until you reach a light, spreadable consistency.
  • Taste and adjust sweetness, adding more honey or syrup if desired. Finish with a pinch of salt to balance the flavors.

3. Prepare the Toast:

  • While the strawberries are roasting, toast the slices of bread. You can toast them in a toaster, on a grill pan, or in the oven at 375°F (190°C) for about 5-7 minutes until golden brown and crispy.
  • Brush each slice lightly with olive oil for extra flavor and crunch.

4. Assemble the Toast:

  • Spread a generous layer of the whipped ricotta on each piece of toast.
  • Top with a spoonful of the roasted strawberries and drizzle with any juices left on the baking sheet.

5. Garnish and Serve:

  • Garnish with a few fresh leaves of basil or mint, or a sprinkle of lemon zest for a bright, fresh flavor.
  • Serve immediately and enjoy!
