Classic Meatloaf with Roasted Potatoes

Meatloaf Ingredients:

  • 1 lb ground beef (or a mix of beef and pork for extra flavor)
  • 1/2 cup breadcrumbs (preferably panko or Italian breadcrumbs)
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • 2 tbsp Worcestershire sauce
  • 1 tbsp ketchup (for the meatloaf mixture)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Topping for Meatloaf:

  • 1/4 cup ketchup (for glazing)
  • 1 tbsp brown sugar (optional, for sweetness)
  • 1 tsp Dijon mustard (optional, for a bit of tang)

Roasted Potatoes Ingredients:

  • 4 medium potatoes, peeled and cut into 1-inch cubes (or wedges)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp dried rosemary (or thyme)
  • Salt and pepper to taste

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

2. Prepare the Meatloaf:

  • In a large bowl, combine the ground beef (or beef/pork mix), breadcrumbs, milk, chopped onion, minced garlic, egg, Worcestershire sauce, ketchup, oregano, thyme, salt, and pepper.
  • Mix everything together until just combined. Avoid over-mixing, as this can make the meatloaf dense.

3. Shape the Meatloaf:

  • Transfer the meat mixture into a lightly greased loaf pan, or shape it by hand into a loaf shape and place it on a lined baking sheet.

4. Prepare the Glaze:

  • In a small bowl, mix the ketchup, brown sugar, and Dijon mustard (if using) together. Spread the glaze evenly over the top of the meatloaf.

5. Prepare the Roasted Potatoes:

  • While you’re preparing the meatloaf, toss the potato cubes or wedges in a bowl with olive oil, garlic powder, paprika, rosemary, salt, and pepper.
  • Spread the seasoned potatoes out in a single layer on the prepared baking sheet (you can use the same baking sheet as the meatloaf if you have enough room).

6. Bake:

  • Place the meatloaf in the oven and bake for about 45 minutes.
  • After 45 minutes, check the internal temperature of the meatloaf with a meat thermometer (it should read 160°F or 71°C).
  • Meanwhile, roast the potatoes for about 35-40 minutes, flipping halfway through, until they’re golden and crispy.

7. Finish Baking:

  • Once the meatloaf has reached the proper temperature, remove it from the oven and let it rest for 10 minutes before slicing. This helps keep the juices inside.
  • The roasted potatoes should be crispy and tender at this point. If they need a little more time, just let them roast for an additional 5-10 minutes.

8. Serve:

  • Slice the meatloaf and serve alongside the roasted potatoes. You can also pair with a side of steamed vegetables or a simple green salad for a balanced meal.

Tips:

  • For a moister meatloaf: You can add a few tablespoons of grated carrot or zucchini into the meat mixture for added moisture and nutrition.
  • Meatloaf variations: Feel free to swap in ground turkey or chicken for a lighter version, though it may require a bit of extra seasoning.
  • Leftovers: Leftover meatloaf is great for sandwiches the next day!
