Burrata Bruschetta

Burrata Bruschetta is an absolutely delicious appetizer or snack! The creamy, rich burrata paired with fresh, flavorful tomatoes and crispy toasted bread makes for a perfect bite. Here’s a simple recipe for you:

Burrata Bruschetta

Ingredients:

  • 1 loaf of crusty baguette (or any good quality Italian bread like ciabatta)
  • 2 tbsp olive oil (for drizzling on the bread)
  • 2 cloves garlic, peeled (for rubbing on the toasted bread)
  • 2 cups cherry or grape tomatoes, halved or quartered
  • 1 tbsp balsamic vinegar (optional, for extra depth)
  • 1 tbsp fresh basil, finely chopped (plus extra for garnish)
  • 1-2 balls of burrata (depending on how much you want per bruschetta)
  • Salt and freshly cracked black pepper, to taste
  • Olive oil (for drizzling on top)

Instructions:

  1. Toast the Bread:

    • Preheat your oven to 400°F (200°C).
    • Slice the baguette into 1-inch slices on a diagonal.
    • Arrange the slices on a baking sheet and drizzle them lightly with olive oil.
    • Toast in the oven for about 5-7 minutes, or until golden and crispy. Alternatively, you can toast them on a grill or in a skillet.
  2. Prepare the Tomato Topping:

    • While the bread is toasting, slice the tomatoes and place them in a bowl.
    • Add fresh basil, a drizzle of olive oil, and balsamic vinegar (if using). Season with a pinch of salt and freshly cracked black pepper. Toss everything together and set aside to marinate.
  3. Assemble the Bruschetta:

    • Once the bread is toasted, take the garlic cloves and rub them over the warm bread slices to infuse some garlicky flavor.
    • Spoon a generous amount of the tomato mixture on each slice of toast.
  4. Add the Burrata:

    • Gently tear the burrata into pieces and place them on top of the tomato mixture.
    • The burrata should be soft and creamy, so it will melt slightly into the tomatoes and bread.
  5. Final Touches:

    • Drizzle a little more olive oil over the top.
    • Garnish with more fresh basil and a pinch of black pepper if desired.

Serving:

Serve the bruschetta immediately while the bread is still warm and crispy. The combination of the creamy burrata, tangy tomatoes, and crunchy bread will be an instant hit!


Tips:

  • Freshness is key! Use the ripest tomatoes you can find for the best flavor.
  • If you don’t have burrata, fresh mozzarella can also work as a substitute, but burrata gives that extra creamy richness that makes this dish special.
  • For a more gourmet touch, drizzle with truffle oil or top with pine nuts for added texture and flavor.
