Homemade Egg Rolls

Making homemade egg rolls is a fun and rewarding process! You can stuff them with your favorite ingredients, from vegetables to meats like pork or chicken. Here’s a basic recipe for crispy and delicious homemade egg rolls.

Homemade Egg Rolls Recipe

Ingredients:

For the filling:

  • 1 lb ground pork (or chicken, shrimp, or beef)
  • 1/2 medium onion, finely chopped
  • 1 cup shredded cabbage (green or Napa)
  • 1/2 cup shredded carrots
  • 2-3 green onions, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce (optional, but adds flavor)
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sesame oil (optional, for flavor)
  • 1 egg (to seal the rolls)

For frying:

  • Vegetable oil (for deep frying, or just enough to pan-fry)

For dipping sauce (optional):

  • Soy sauce mixed with a touch of rice vinegar and sugar
  • Sweet chili sauce

Instructions:

  1. Prepare the filling:

    • In a large skillet, heat a little oil over medium heat.
    • Add the ground meat and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat.
    • Add the chopped onion, garlic, and green onions, and cook for 2-3 minutes until softened.
    • Add the shredded cabbage and carrots, and cook for another 3-4 minutes, stirring occasionally, until the veggies soften. (You don’t want them too soft; they should still have a bit of crunch.)
    • Stir in the soy sauce, oyster sauce (if using), sesame oil, ginger, and pepper. Mix well and remove from heat. Let the mixture cool down a little.
  2. Assemble the egg rolls:

    • Lay one egg roll wrapper on a clean, flat surface, with one corner facing you (like a diamond shape).
    • Spoon about 2 tablespoons of the filling onto the center of the wrapper.
    • Fold the bottom corner up over the filling, then fold in the sides like an envelope. Roll it up tightly, but not too tight that the filling will burst out.
    • Seal the top corner with a little bit of beaten egg to hold the roll together. Repeat with the remaining wrappers and filling.
  3. Fry the egg rolls:

    • Heat vegetable oil in a deep skillet or wok over medium-high heat. You want enough oil to submerge about half of the egg roll.
    • Once the oil is hot (about 350°F or 175°C), carefully add a few egg rolls at a time, being sure not to overcrowd the pan.
    • Fry for 3-4 minutes, turning occasionally, until golden brown and crispy on all sides.
    • Remove the egg rolls from the oil and place them on a plate lined with paper towels to drain any excess oil.
  4. Serve:

    • Serve your homemade egg rolls hot with your favorite dipping sauces, such as soy sauce, sweet chili sauce, or even a tangy mustard sauce.

These homemade egg rolls are crispy, crunchy, and packed with flavor. You can customize the filling with other ingredients like mushrooms, bean sprouts, or even tofu for a vegetarian version.
