Here’s a delicious recipe to make Cheesy Meatloaf on Creamy Mashed Potatoes:

Cheesy Meatloaf on Creamy Mashed Potatoes Recipe

Ingredients:

For the Cheesy Meatloaf:

  • 1 1/2 lbs ground beef (or a mix of beef and pork for extra flavor)
  • 1 cup shredded cheddar cheese (or your favorite cheese like mozzarella or Monterey Jack)
  • 1/2 cup breadcrumbs (Panko or regular)
  • 1/4 cup grated Parmesan cheese
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 large egg
  • 1/4 cup milk
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil (optional)
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper, to taste
  • 1/2 cup ketchup (for topping)

For the Creamy Mashed Potatoes:

  • 2 lbs Yukon Gold or Russet potatoes (peeled and cut into chunks)
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk or heavy cream (adjust for desired consistency)
  • Salt and pepper, to taste
  • 2 tablespoons sour cream (optional, for extra creaminess)
  • 2-3 tablespoons fresh chopped parsley (optional, for garnish)

Instructions:

1. Make the Meatloaf:

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine the ground beef, shredded cheese, breadcrumbs, grated Parmesan, chopped onion, minced garlic, egg, milk, oregano, basil (if using), Worcestershire sauce, and a pinch of salt and pepper.
  • Mix everything together until well combined. You can use your hands or a spoon for this step, but don’t overwork the meat to avoid a tough texture.
  • Transfer the meat mixture into a loaf pan, shaping it into a loaf shape. Alternatively, you can form the meatloaf by hand and place it on a baking sheet lined with parchment paper or foil.
  • Spread a thin layer of ketchup over the top of the meatloaf for a classic flavor.
  • Bake for about 45-55 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F or 71°C). Let it rest for 5-10 minutes before slicing.

2. Make the Mashed Potatoes:

  • While the meatloaf is baking, place the peeled and cut potatoes in a large pot. Cover them with cold water and add a pinch of salt.
  • Bring the pot to a boil, then reduce the heat and let the potatoes simmer for about 12-15 minutes or until they are fork-tender.
  • Drain the potatoes and return them to the pot. Add the butter and begin mashing with a potato masher.
  • Gradually add the milk (or cream) until you reach your desired consistency.
  • Stir in the sour cream (if using), and season with salt and pepper to taste.
  • If you like your mashed potatoes extra smooth, you can use a hand mixer or a potato ricer to mash them.
  • Keep warm on low heat until the meatloaf is ready to serve.

3. Serve:

  • Spoon a generous portion of the creamy mashed potatoes onto each plate.
  • Top with slices of the cheesy meatloaf.
  • Garnish with chopped fresh parsley, if desired.

Why This Recipe Works:

  • Cheesy Meatloaf: The cheese inside the meatloaf adds richness and moisture, making it extra tender and flavorful. The crispy exterior is complemented by the soft, cheesy interior.
  • Creamy Mashed Potatoes: The potatoes are perfectly creamy and buttery, creating the perfect base for the hearty meatloaf.
  • Classic Comfort Food: This dish brings together all the comfort food vibes, making it a satisfying meal that the whole family will enjoy.

Tips & Variations:

  • Vegetables in the Meatloaf: Add finely chopped vegetables like bell peppers, carrots, or zucchini to the meatloaf mixture for extra nutrition and flavor.
  • Cheese Variations: Experiment with different cheeses like mozzarella for a stringy, melty effect, or gouda for a smoky flavor.
  • Toppings for Mashed Potatoes: You can top the mashed potatoes with shredded cheese, bacon bits, or chives for an extra kick.
  • Spicy Kick: Add a tablespoon of sriracha or red pepper flakes to the meatloaf for a little heat.

Serving Suggestions:

  • This dish pairs wonderfully with a side of steamed vegetables, such as broccoli or green beans, for a balanced meal.
  • You could also serve it with a crisp green salad to add some freshness to the rich and hearty flavors of the meatloaf and potatoes.

This Cheesy Meatloaf on Creamy Mashed Potatoes is a warm, filling dish that combines two all-time favorite comfort foods into one perfect meal. It’s easy to make and will surely become a family favorite! Let me know how it turns out, or if you want any more tweaks to the recipe!
