Instructions:

1. Prepare the Ingredients:
  • Wash and peel the potatoes, then cut them into 1-inch cubes.
  • Trim the green beans and cut them into 2-inch pieces.
2. Cook the Potatoes:
  • Heat 1 tablespoon of olive oil or butter in a large skillet or Dutch oven over medium heat.
  • Add the cubed potatoes and cook for about 8-10 minutes, stirring occasionally, until they start to brown and soften.
3. Add the Green Beans:
  • Add the trimmed green beans to the skillet with the potatoes. Stir to combine.

  • Pour in the chicken or vegetable broth, then season with thyme, salt, and pepper.
  • Cover the skillet and let the mixture simmer for 15-20 minutes, or until both the potatoes are tender and the green beans are cooked through. Stir occasionally and check if you need to add a little more broth or water to prevent sticking.
5. Finish and Serve:
  • Once the potatoes are tender and the green beans are bright and tender, remove from heat.
  • Garnish with fresh parsley, if desired, and serve hot.
