Breakfast Sausage Crescent Rolls
Ingredients:
- 1 can refrigerated crescent rolls (usually 8 rolls per can)
- 1 lb breakfast sausage (any variety, spicy or mild)
- 1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
- 2 large eggs (optional, to add a scrambled egg filling)
- Salt and pepper to taste
- 1 tbsp butter (optional, for brushing on top)

Preheat the Oven: Preheat your oven to 375°F (190°C).

Cook the Sausage: In a large skillet, cook the breakfast sausage over medium heat until browned and cooked through, breaking it apart with a spatula as it cooks. Drain any excess fat if necessary. If you’d like to add scrambled eggs, whisk the eggs in a bowl, and scramble them in the same skillet with the sausage for a minute or two until fully cooked. Season with salt and pepper.

Prepare Crescent Rolls: Open the can of crescent rolls and unroll them onto a baking sheet lined with parchment paper. You’ll want to separate the triangles and keep them ready to be filled.

Assemble: Place a small spoonful of the sausage mixture (and scrambled eggs, if you’re using them) in the wide end of each crescent roll triangle. Sprinkle a little shredded cheese on top of the sausage.

Roll Them Up: Starting at the wide end of each triangle, roll the crescent dough around the filling, sealing the edges as best you can. If you want them extra crispy, you can gently pinch the seams closed.

Bake: Place the crescent rolls on the prepared baking sheet and bake according to the instructions on the can (usually 10-12 minutes) or until the rolls are golden brown.

Optional – Butter Brush: If you’d like a golden, buttery finish, melt a little butter and brush it over the tops of the rolls just before baking.

Serve: Once done, remove from the oven and serve warm. These are great with a side of fresh fruit, hashbrowns, or even a drizzle of maple syrup for extra flavor.
Tips:
- You can make these ahead of time by assembling them, placing them on a baking sheet, and covering them with plastic wrap. Refrigerate overnight, and bake them fresh the next morning!
- Feel free to add extra ingredients like sautéed onions, bell peppers, or even some hot sauce for an extra kick.
