Crispy Roasted Cauliflower recipe

Here’s a simple and delicious Crispy Roasted Cauliflower recipe that’s packed with flavor and perfect as a side dish or snack. The key to getting that crispy texture is roasting at a high temperature and using a little bit of cornstarch.

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 1 tablespoon cornstarch (this helps with crispiness!)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (or regular paprika)
  • Salt and freshly cracked black pepper, to taste
  • 1 tablespoon lemon juice (optional, for a fresh zing)
  • Fresh parsley, chopped (for garnish, optional)
  • Parmesan cheese (optional, for extra flavor)

Instructions:

  1. Preheat the oven:

    • Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it with oil.
  2. Prepare the cauliflower:

    • Cut the cauliflower into bite-sized florets. Try to make them as uniform in size as possible so they cook evenly.
  3. Season and coat:

    • In a large bowl, toss the cauliflower florets with olive oil until well coated. Sprinkle the cornstarch, garlic powder, onion powder, paprika, salt, and pepper over the cauliflower. Toss again until everything is evenly coated.
  4. Arrange on the baking sheet:

    • Spread the cauliflower in a single layer on the prepared baking sheet. Make sure the florets aren’t crowded—this will help them roast evenly and get crispy.
  5. Roast:

    • Roast the cauliflower for 25-30 minutes, flipping halfway through. The cauliflower should be golden brown and crispy on the edges when it’s done.
  6. Finish and serve:

    • Once out of the oven, squeeze a little fresh lemon juice over the roasted cauliflower for a pop of freshness (optional). Garnish with chopped parsley or a sprinkle of Parmesan if desired.

Tips:

  • For extra crispy cauliflower: After flipping halfway, return the cauliflower to the oven without covering it. This ensures the florets crisp up even more.
  • Add more flavor: You can customize the seasoning with your favorites—add chili flakes for heat or some lemon zest for more citrus.
  • Serve it as a snack: Pair it with a dipping sauce like ranch, tzatziki, or sriracha mayo for a tasty treat.
