Roasted Honey Mustard Chicken Recipe

Ingredients:

  • For the chicken:

    • 4 bone-in, skin-on chicken thighs (or chicken breasts if preferred)
    • 2 tablespoons olive oil
    • Salt and pepper to taste
    • 1 teaspoon garlic powder (optional)
    • 1 teaspoon paprika (optional)
  • For the honey mustard sauce:

    • 3 tablespoons Dijon mustard
    • 3 tablespoons honey
    • 1 tablespoon whole grain mustard (optional, for extra texture)
    • 1 tablespoon apple cider vinegar or lemon juice
    • 1 tablespoon olive oil
    • 1 teaspoon garlic powder
    • Salt and pepper to taste

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease a baking dish.

2. Prepare the Chicken:

  • Pat the chicken thighs dry with paper towels to remove excess moisture (this helps the skin crisp up during roasting).
  • Rub the chicken with olive oil, and season with salt, pepper, garlic powder, and paprika for extra flavor (if using).
  • Place the chicken on the prepared baking sheet or in the baking dish, skin-side up.

3. Make the Honey Mustard Sauce:

  • In a small bowl, whisk together Dijon mustard, honey, whole grain mustard (if using), apple cider vinegar (or lemon juice), olive oil, garlic powder, salt, and pepper until smooth and well combined.

4. Coat the Chicken:

  • Brush about 2/3 of the honey mustard sauce generously over the chicken, making sure it’s coated evenly on all sides. Reserve the remaining sauce for drizzling later.

5. Roast the Chicken:

  • Place the chicken in the oven and roast for 35-45 minutes (depending on the size of the chicken pieces), or until the internal temperature reaches 165°F (74°C) and the skin is golden and crispy.
  • Halfway through cooking, you can brush the chicken with more of the honey mustard sauce for added flavor.

6. Optional Glaze:

  • For extra caramelization, you can broil the chicken for the last 2-3 minutes of cooking. Just keep an eye on it so it doesn’t burn!

7. Serve:

  • Remove the chicken from the oven and let it rest for 5-10 minutes before serving.
  • Drizzle the reserved honey mustard sauce over the chicken before serving.
