Sausage muffins are a savory, filling breakfast or snack that’s super easy to make. Here’s a simple recipe that combines the savory flavors of sausage and cheese with the fluffiness of a muffin:

Savory Sausage Muffins Recipe

Ingredients:

  • For the muffins:
    • 1 lb (about 450g) breakfast sausage (your choice of mild or spicy)
    • 2 cups all-purpose flour
    • 1 tablespoon baking powder
    • ½ teaspoon salt
    • 1 teaspoon garlic powder (optional, for extra flavor)
    • 1 cup shredded cheddar cheese (or your favorite cheese)
    • 1 large egg
    • 1 cup milk
    • ¼ cup unsalted butter (melted)

Instructions:

  1. Cook the Sausage:

    • In a large skillet, cook the sausage over medium heat until browned and cooked through. Use a spoon to break it up into crumbles as it cooks. Once done, drain the excess fat and set the sausage aside to cool slightly.
  2. Preheat the Oven:

    • Preheat your oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
  3. Prepare the Dry Ingredients:

    • In a large mixing bowl, whisk together the flour, baking powder, salt, and garlic powder (if using).
    • Stir in the shredded cheese to evenly distribute it throughout the flour mixture.
  4. Combine the Wet Ingredients:

    • In another bowl, whisk together the egg, milk, and melted butter.
  5. Mix Everything Together:

    • Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
    • Gently fold in the cooked sausage, making sure it’s evenly distributed throughout the batter.
  6. Fill the Muffin Tin:

    • Spoon the batter into the muffin tin, filling each muffin cup about ¾ full. The sausage will distribute as it bakes.
  7. Bake:

    • Bake for 20-25 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
  8. Cool and Serve:

    • Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
    • Serve warm and enjoy them as a hearty breakfast, snack, or even a savory side with soup or salad.

Optional Add-ins: You can also add some finely chopped vegetables (like bell peppers, onions, or spinach) to the batter for extra flavor and nutrients!

These sausage muffins are perfect for meal prep and will stay fresh in an airtight container for a few days, or you can freeze them for later! Enjoy!
