Here’s how to make a Fresh Southern Peach Cobbler from scratch:

Ingredients:

For the Filling:

  • 4-5 ripe peaches (peeled, pitted, and sliced)
  • 1/2 cup granulated sugar (adjust based on the sweetness of the peaches)
  • 1 tbsp lemon juice
  • 1/2 tsp vanilla extract
  • 1 tbsp cornstarch (optional, for thickening)
  • 1/4 tsp ground cinnamon (optional, for extra flavor)
  • Pinch of salt

For the Biscuit Topping:

  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon (optional)
  • 1/4 cup cold unsalted butter (cut into small pieces)
  • 1/2 cup buttermilk (or milk, if you don’t have buttermilk)

For the Topping:

  • 2 tbsp unsalted butter (melted, for brushing)
  • 1 tbsp sugar (for sprinkling)

Instructions:

1. Prepare the Peach Filling:

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the sliced peaches, sugar, lemon juice, vanilla extract, and cinnamon (if using). Stir gently to coat the peaches in the sugar and spices.
  • If you prefer a thicker filling, sprinkle the cornstarch over the peach mixture and toss to combine. This will help thicken the juice as the cobbler bakes.
  • Pour the peach mixture into a greased 9×9-inch (or similar size) baking dish. Set aside while you prepare the biscuit topping.

2. Make the Biscuit Topping:

  • In a separate mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon (if using).
  • Add the cold butter pieces to the dry ingredients. Use a pastry cutter, fork, or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  • Pour in the buttermilk (or regular milk) and stir just until the dough comes together. Be careful not to overmix; the dough should be slightly lumpy.

3. Assemble the Cobbler:

  • Drop spoonfuls of the biscuit dough over the peach filling in the baking dish. It doesn’t have to cover the entire surface—leaving gaps will allow the peaches to bubble up through the topping as it bakes.
  • Brush the biscuit topping with the melted butter and sprinkle with the remaining 1 tbsp of sugar to help it brown and form a slightly crispy, sweet top.

4. Bake the Cobbler:

  • Bake in the preheated oven for 40-45 minutes, or until the biscuit topping is golden brown and a toothpick inserted into the center of the biscuit topping comes out clean.
  • The peach filling should be bubbling around the edges and thickened.

5. Serve:

  • Remove the cobbler from the oven and let it cool for about 10-15 minutes before serving.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for the ultimate treat.
