0-point Almond Joy Cookies

Posted on June 8, 2025
Here’s a light, satisfying recipe for 0-Point Almond Joy Cookies — inspired by the candy bar but designed to be Zero Points on the Weight Watchers (WW) plan when made with 0-point ingredients like unsweetened coconut, egg whites, and monk fruit or stevia-based sweeteners.

🍫 No flour, no oil, no guilt — just chewy coconut, chocolatey goodness!

🍪 0-Point Almond Joy Cookies (WW-Friendly)

⭐ Ingredients (Makes about 12 cookies):

  • 1 cup unsweetened shredded coconut

  • 2 large egg whites

  • 2 tbsp granular zero-calorie sweetener (like monk fruit, erythritol, or stevia)

  • ½ tsp vanilla extract

  • ½ tsp almond extract

  • 2 tbsp unsweetened cocoa powder (or use sugar-free chocolate chips if allowed in your plan)

  • Pinch of salt

🧑‍🍳 Instructions:

1. Preheat the Oven:

  • Preheat oven to 350°F (175°C).

  • Line a baking sheet with parchment paper or a silicone baking mat.

2. Mix the Batter:

  • In a mixing bowl, whisk egg whites until frothy.

  • Stir in sweetener, vanilla, almond extract, salt, and cocoa powder (if using).

  • Fold in the shredded coconut until well combined.

3. Form the Cookies:

  • Scoop about 1 tablespoon of mixture per cookie onto the baking sheet.

  • Flatten slightly with the back of a spoon or your fingers.

4. Bake:

  • Bake for 12–15 minutes, or until edges are golden and tops are set.

  • Let cool completely on the baking sheet—they firm up as they cool.

5. Serve or Store:

  • Store in an airtight container at room temp for 3–4 days or refrigerate up to a week.

✅ Tips & Variations:

  • Chocolate drizzle? Melt 1–2 tbsp sugar-free chocolate chips and drizzle on top (may add 1 point depending on your WW plan).

  • Add chopped almonds or almond slivers for texture (may count as points).

  • For a softer texture, pulse coconut a few times in a food processor before mixing.
