Hereโ€™s a simple and delicious recipe for Chicken Salad with Fruits and Mayonnaise. It’s a great combination of savory chicken, sweet fruits, and creamy mayo!

Ingredients:

  • 2 cups cooked chicken breast (shredded or cubed)
  • 1/2 cup grapes, halved (you can use red or green)
  • 1/2 apple, diced (green or red, your choice)
  • 1/4 cup chopped pineapple (fresh or canned, drained)
  • 1/4 cup chopped celery (optional, for crunch)
  • 1/4 cup walnuts or almonds (optional, for extra crunch)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard (optional for a slight tang)
  • Salt and pepper, to taste
  • 1 teaspoon lemon juice (optional, for freshness)

Instructions:

  1. Prepare the chicken: If you haven’t already, cook your chicken (grilled, boiled, or roasted). Shred or dice it into bite-sized pieces.
  2. Prepare the fruits: Slice the grapes in half, dice the apple and pineapple, and chop the celery and nuts if youโ€™re using them.
  3. Make the dressing: In a small bowl, mix the mayonnaise, Dijon mustard, salt, pepper, and lemon juice.
  4. Combine: In a large bowl, combine the cooked chicken, grapes, apple, pineapple, celery, and nuts. Add the mayo mixture and toss everything together gently until well-coated.
  5. Taste and adjust: Taste the salad and adjust the seasoning with more salt, pepper, or lemon juice if needed.
  6. Serve: Serve immediately or refrigerate for about 30 minutes to let the flavors meld. Itโ€™s great as a side dish, on top of greens, or as a sandwich filling.
